Who doesn’t love creamy mousse desserts? These toothsome delicacies, which are light and airy in texture, are exquisitel­y rich in taste. Having originated in France, the mousse dates back to the 18th century when it was served as a savoury dish, which included pureed meat, fish and vegetables. It was not until the early 1900s that the sweet version of mousse emerged with the addition of chocolate to the recipe. This ingenious creation was initially called mayonnaise au chocolat because of its creamy consistenc­y; but it was later renamed ‘mousse,’ which translates into ‘foam’ in French.

Today, mousses come in a variety of flavours, and it is simple to make too since it requires very few ingredient­s. The three basic components include the base, binder and aerator. Melted chocolate, pureed fruit or custard serve as ideal bases; whipped cream or meringue are used as aerators; and the concoction is sometimes held together by binders such as gelatin. The aerators are folded into the base, the ingredient­s whisked together and voila, there you have it!
