2 80g 2 tsp 200g 100g ½ tsp 2 tsp unsalted butter white caster sugar eggs (medium size) vanilla paste oranges (zest and juice) yoghurt baking powder plain flour nut flour (almond or hazelnut) fine sea salt cardamom powder

TOPPING

2 oranges (cut the ends off and slice into 3 mm wheels) fine cut citrus marmalade water brown sugar salted butter 100g 50 ml 20g 30g

TOPPING

Heat the marmalade, water and sugar over medium heat, stirring occasional­ly. When it reduces slightly, add the butter and stir until melted and combined. Turn off the heat and set aside.

CAKE

Preheat the oven to 170°C. Grease and line a 20 cm spring form cake pan. Beat the sugar and butter together until light and fluffy, then add the eggs one at a time and finally, the vanilla paste.

Mix the orange juice and zest with the yoghurt.

Sift the flour, baking powder and salt in a medium-size bowl, and add the nut flour. Then add half of the dry mixture to the sugar and egg combinatio­n, and mix until just combined. Include the yoghurt, juice and zest mix. Finish with the dry mixture, stirring until all the ingredient­s are incorporat­ed.

Pour the topping mixture into the lined cake tin and layer the slices of oranges to cover the entire base. Lastly, add the cake batter and tap lightly to even it out.

Place in the oven and bake for 40-45 minutes. Allow it to cool slightly before turning out the cake onto a plate. Admire the bottom of the cake, which is now the decorative top!
