KAKUNI (JAPANESE-STYLE BRAISED PORK)

INGREDIENT­S

300g pork belly

600 ml water

100 ml soya sauce

40g sugar

100 ml sake

2 half boiled eggs

Ginger (to taste)

Spring onion (to taste) Julienne leeks*

Boiled pak choi*

Mustard*

Cornflour to thicken sauce * According to the quantity being served

RECIPE

Sprinkle the sake on a chunk of pork belly, place the ginger and spring onions on it, and steam for two hours.

Put the steamed pork belly in a sauce that contains water, soy sauce, sake and sugar, and simmer for an hour. When completed, add eggs and store in the refrigerat­or for between half and a full day.

Cut the pork belly into blocks and warm the sauce with cornflour. Serve with green onions, egg, pak choi, julienne leeks and mustard.

NOTE This recipe serves two persons.
