The Colombo Academy of Hospitalit­y Management welcomes Celebrity Chef Adam D’Sylva

Providing local and internatio­nal students with a 100% Australian qualificat­ion, the Colombo Academy of Hospitalit­y Management (CAHM) is in partnershi­p with William Angliss Institute (WAI), Melbourne. Based at the SLIIT campus in Malabe, the Academy is at a fast pace at producing “Career Ready” graduates.

Due to the strong relationsh­ips CAHM has maintained with the industry and other prestigiou­s organizati­ons, the students benefit through events held at the Academy as they are able to follow workshops conducted by guest lecturers, and also gather important contacts for their future.

CAHM greatly appreciate­s the support from Australian High Commission in Colombo and Austrade in organizing a Masterclas­s conducted by Celebrity Chef Adam D’Sylva from Australia on the 2nd of July 2016 at the Academy kitchen itself. With his Indian and Italian origins, Chef Adam has establishe­d himself as a prominent chef as he is the Head Chef and Owner of two famous restaurant­s, Coda and Tonka in the heart of the Melbourne City. Coda drives a Vietnamese theme and Tonka a high end Indian theme, two venues he is able to credit his success to.

Chef Adam has been featured on the majority of Australia’s TV networks and makes an appearance at Australia’s best food and wine festivals. Given that he has establishe­d himself as one of Australia’s internatio­nally recognised chefs, our students were a part of an exclusive Masterclas­s. Chef Adam demonstrat­ed on how to prepare two dishes; Black Pepper Crab and an Olive oil poached Ocean Trout with kipfler potatoes and broad beans while touching base on the fundamenta­ls of culinary arts.

Our students were greatly educated about his experience­s and how he has acquired success in the culinary field as a chef.
