Brownie Business

Gayani Liyanage is an inbound tour operator turned home baker. She has always enjoyed baking and experiment­ing in the kitchen, and has discovered brownies to be her best product. Over the last ten years, she tested over a hundred recipes, including those from renowned chefs such as Curtis Stone, Jamie Oliver, Nigella Lawson and Matt Preston, until she perfected her own version.

As the pandemic spread this year, Gayani looked for ways to keep herself occupied and not overthink about what the future holds for tourism. This led her to start her venture ‘Brownie Business’.

Baking during the Christmas season has always been special in her household; Gayani loves how her entire house would be engulfed with the fragrances of vanilla, cinnamon, coffee and chocolate.

Her Christmas menu includes themed brownies like Trees on a Plate, Santa’s Hats, Pebbles in Snow, Christmas Lights, Santa’s Belt and Grinch in a good mood.

She also accepts customized orders. “Most of our regular brownies have been customised according to what our lovely customers have asked for, so we are very keen to hear from them what they would like for Christmas as well,” she says.

Cleanlines­s is a priority in her kitchen. Since working with chocolate is always messy, Gayani ensures her hands are always washed and sanitized. Packaging for the brownies is also done in-house and the final boxed product leaves the kitchen sealed.
