From the sea to the plates of Tokyo’s lux­ury restau­rants in eight hours. The Ja­panese startup Ghi­bli brings the catch of the day 1,000 kilo­me­ters from the small is­land of Oshima to Ja­pan’s me­trop­o­lis at record speed. Founder Chika Tsub­ouchi has been mak­ing it pos­si­ble for fish­er­men to be­come in­de­pen­dent of whole­salers and sell di­rectly to restau­rants since 2014. By cut­ting out the mid­dle­man, the fish­er­men earn more and cus­tomers in the restau­rant pay less. Sales are con­ducted by way of mes­sen­ger ser­vices like Line, Ja­pan’s ver­sion of What­sapp. The com­pany has be­come a model for re­vi­tal­iz­ing Ja­pan’s en­tire fish­ing in­dus­try.
