EMBRACE NEW FLAVOURS FROM PERU AT SABORES

While we can count the restaurant­s in Bangkok that serve Peruvian food on one hand, we hadn’t come across one Peruvian food delivery... until last week. And, boy, were we glad to have found it. Although Sabores (Spanish for flavours) from Peru has a modest online following, some further scrolling down revealed it had participat­ed in latin food festivals and catered for many events. We decided to take a gamble and ended up hitting quite the jackpot. Causa rellena de pollo (B200) has two discs of potatoes sandwichin­g delicious stuff between them. The potato cake offers multiple layers of delights from top to bottom. The creamy mash potatoes comes with a hint of cumin. The filling of chicken with homemade mayo and slices of avocado may sound too rich but the fried bacon bits bring a much-welcomed and crispy contrast. The Ceviche de pescado (B250) gives many spoonfuls of zest and oomph. The bite-sized pieces of sea bass is cooked in acidic leche de tigre, the Peruvian term for citrus-based marinade, along with red onion and chilli. It may look uber pungent but, for those who prefer intense flavours, each spoon is simply an explosion of flavour and texture. It never reaches the point of being too sour or spicy, thanks to the sweet corn. Papa rellena (B190 for two pieces) impresses with delicious stuffing inside a potato envelope — similar to a croquette. Those beef bits inside the mash potato may be small but they come through with a strong flavour from being well-seasoned. Served with fries, Lomo saltado (B290) almost gets a perfect score from us. Every chew on the sauteed tenderloin beef bursts with aroma and flavour. You can really appreciate the spices while still tasting the beef. The veggies are also flavourful and tender while retaining some crispiness. Had the beef been a bit more tender, we would have sung praises to this dish. Shirley and Gustavo are the wife and husband duo behind Sabores and also the cooks of this ma-and-pa operation (or we should say mamá-y-papá). Although we can’t vouch for the authentici­ty of Sabores’ flavour since we’ve never been to Peru, we can say with certainty that it delivers quite a fiesta of flavour. In short, we likey.
