Indonesian chef brings celebrity flair to St. Regis
Ray Adriansyah adds his Indonesian heritage to local foods
Indonesian celebrity chef Ray Adriansyah from Bali’s Locavore restaurant, ranked 22nd on Asia’s 50 Best Restaurants 2017 list, will be showcasing his cutting-edge culinary flair at VIU restaurant of the St. Regis Bangkok on March 22-23. Boasting two evenings of fine gastronomy, the event is a part of Fine Dining Lovers Guest Chef series initiated by S.Pellegrino and aiming to bring to Thailand a line-up of culinary masters from esteemed dining establishments around the world. Featuring contemporary European cooking combined with hyper-local Indonesian ingredients, Locavore takes its name and cues from locavorism, an eco-conscious food movement that urges chefs and consumers alike to seek out food within a 100km radius. Born in Jakarta, Adriansyah grew up with a deep interest in traditional and international cuisines. For the Bangkok event, he will present through a five-course-meal, a selection of dishes that celebrate both locally-sourced and seasonal Indonesian ingredients. Among his signature items are steak tartare with tong cai (pickled radish), aminos liquid, genjer (yellow sawah lettuce), mushrooms and fermented black garlic, and lamb nasi bakar (Javanese charcoal-grilled banana leaf-wrapped steamed rice with spices and meat), kecap (Indonesian sweet soy sauce) and eggplant.
The menu is complemented by fine wines from various world-famous wine growing regions including Spain, Germany, France and Italy. The dinner is priced at 4,000 baht per person, or 6,700 baht per person with pairing wines.
