A SPANISH AFFAIR

- STORY: VANNIYA SRIANGURA

Until Saturday, head chef Pere Planagumà of the two Michelin-starred Les Cols in Spain is delighting diners with his distinctive concept of creative, sustainable and seasonal cuisine.

From the serene mountainous vicinity of Olot in the Catalonia region, he has taken over Jojo Italian restaurant at the St. Regis Bangkok and is showcasing his style of Spanish cuisine through a series of lunches and dinners.

Planagumà has worked at several world-acclaimed dining establishments, including Paris’ three Michelin-starred La Tour d’Argent and Spain’s three Michelin-starred El Bulli (also The World’s Best Restaurant of 2002, 2006, 2007, 2008 and 2009), under the culinary wizard Ferran Adrià in Girona. He was also culinary consultant and professor of creative cuisine at the award-winning El Celler De Can Roca Restaurant (The World’s Best Restaurant of 2013 and 2015).

Exclusively created for Bangkok, the menu, which reflects Spain’s rural landscape and indigenous harvests, Planagumà strips back to the essentials allowing each ingredient to speak volumes for itself and harmonise with one another.

Highlighted dishes include Joselito ham with olive oil caviar and tomato bread, Catalan-styled oysters with garlic and parsley, stewed potatoes with kudzu (Japanese arrowroot) and spicy chorizo, paella with Catalan allioli sauce and crispy lamb shoulder with milk jelly and thyme. The meal is wrapped up with a freshly-crafted Catalan cream dessert.

Set meals are priced at 3,600 baht per person for lunch (an additional 2,000 baht for wine pairing) and 5,600 baht per person for dinner (an additional 2,500 baht for wine pairing).
