Starter options range from salmon ceviche with pork belly, shrimp and fennel; lobster soup with tortellini and sweetcorn; and steak tartare with mustard ice cream. Main course includes seabream with sugar snap; risotto with asparagus; and wagyu striploin with gnocchi. Utage Japanese restaurant introduces a selection of “Ocean Discoverie­s” dishes prepared with prime imported ingredient­s such as akagai (sweet saltwater clam), hirame (olive flounder), mirugai (very large marine clam); hotate (giant scallop) and madai (red sea bream).
