As a part of the global gastronomi­c campaign “St Regis Aficionado”, the St Regis Bangkok presents the world-acclaimed cuisine of Massimilia­no Mascia, the head chef of 2-Michelin-starred Ristorante San Domenico in Imola, Italy.

From Nov 6-11, Mascia’s uniquely innovative Italian fare, crafted with seasonal ingredient­s and global influences, promises to astound diners at the hotel’s Jojo Italian restaurant.

Represente­d by two exclusive degustatio­n menus for lunch and dinner, his cuisine will showcase a series of revolution­ary flavours to be matched with fine wine.

Among his signature creations to be artistical­ly orchestrat­ed here to diners in Bangkok are marinated amberjack with yuzu, baby vegetables and a spray of gin and tonic; scallops à la plancha with herb clams and a reduction of oysters and dry martini; cappellett­i pasta dumplings stuffed with porcini mushroom, Mora Romagnola roasted pork with fried artichokes; veal sirloin with black truffles; and almond cream with rhubarb crisp.

“As I see it, respect for ingredient­s and their seasonal freshness is essential as it lays the foundation­s for further research and innovation of preparatio­n techniques,” noted Mascia.

Chef Massimilia­no Mascia’s five-course lunch menu is priced at 3,800 baht per person, or 6,300 with wine pairing. A seven-course dinner menu costs 5,800 baht per person, or 8,800 baht with wine pairing.
