Chef Takagi Kazuo wants to stimulate your senses
Mandarin Oriental, Bangkok is to showcase a super-refined aspect of Japanese cuisine by special guest chef Takagi Kazuo of two Michelin-starred Kyoto Cuisine Takagi. For five days from Feb 21-25, Takagi will take control of the kitchen of the hotel’s Lord Jim’s restaurant and present a series of authentic Kyoto-style delicacies for both lunch and dinner.
A renowned master of kyo-ryori (aka Kyoto cuisine — the Emperor’s Kitchen), Takagi has been awarded two Michelin stars for his 12-yearold restaurant located at Ashiya, a city in between Osaka and Kobe, since 2010.
Takagi is committed to serving authentic Japanese meals while conveying through his sensory creations a new way to look at the world. His cuisine reflects the current seasons and tells cultural tales while emphasising natural beauty and subtlety of taste, and is to be experienced by all the senses.
For dining guests at Lord Jim’s, Takagi will present a multi-course dinner. The menu features dishes such as dashi jelly, potato foam, sea urchin, black truffle, cauliflower and shiso flower; Sakuramochi sushi tuna and salmon; skewered duck with green local vegetable and mushroom miso; grilled shrimp and seaweed wrapped with soya skin and crab caviar; Tasmanian salmon with wasabi, micro shiso leaf and soya sauce; and Boston lobster with egg custard, eggplant, asparagus and yuzu.
Options for main course are wagyu beef tenderloin with Japanese pepper sauce and amadai fish with yuzu miso. Both the beef and the fish come with semi-dried tomatoes, shimeji mushroom rice crispy and spinach with chrysanthemum.
Representing the sweet sensations are tangerine orange granite with honey and yuzu jelly; and a platter of red berries, puff pastry, strawberry-matcha sabayon and fromage blanc sorbet.
A five-course dinner is priced at 3,200 baht per person, while a seven-course meal costs 3,900 baht per person.
Lunch is offered in a buffet style with Takagi’s signature sushi and sashimi. Prices are 1,800 baht per person on weekdays and 2,500 baht per person on weekends.
