CANAPÉ & SONS IS THAILAND’S ONLY SUSTAINABL­E CATERING SERVICE

When your special event requires more than just finger food, it is time to bring in the profession­als… Canapé & Sons. Formed by Bangkok’s F&B heavyweigh­ts, Oliver Kramny, Frederic Meyer and Ian Kittichai, this high-end catering company offers innovative menus that focus on delivering the best.

“We customise food and drink according to our guests’ needs and wants, even themed events… we recently did a ‘fun fair’ theme for Bvlgari. This sort of catering sets us apart from other catering companies because we cater on a smaller-level, too,” says Kramny.

With a diverse team, Canapé & Sons offers an alternativ­e to the usual boring food, found at Bangkok’s numerous events. The options include a wide variety of pass-around canapés, food stations and set dinner menus. The company even caters private dinner parties in the comfort of your home, without you having to lift a finger, except sign a cheque!

Signatures include the Crab cigar, where Alaskan crab is slow cooked with organic Thai herbs and is served in a tuile with lime gel. Presented in a modern way, the cigar has an Asian flavour to it and goes well with a glass of bubbly.

Another signature was born out of a picture seen by Kramny, who wanted to replicate the colours from the picture. The result is the Green pea wasabi blini with Scottish salmon. Served with salmon roe and wasabi cream, it is perhaps my favourite canape. A lollipop that requires no licking, just one chomp, is the Salmon lollipop with dill sour cream spiced with fresh horseradis­h.

One of the most popular canapés is the Nori cone with beef tartare, yuzu, pepper and cream cheese. Yum! But the star of the show is the Champagne jelly square served with a huge dollop of Ossetra caviar and gold leaf. Caviar and Champagne being the ultra glam couple, what could be more deserving of your party?

For those who like to keep it classic, request the velvety Mushroom and truffle veloute, which is added for a bit of heaviness, for those who may not want to eat after the event. There are also salads and other small bites, which can be requested, like the Miang tuna served in a crispy shell filled with raw tuna, deep fried shallots, chilli and toasted coconut, that won’t leave you hungry but definitely wanting more.

Canapé & Sons also offers a selection of cocktails and mocktails, and a wonderful thirst quencher is the Mulberry mocktail. Mulberry purée is mixed with lime, sugarcane juice and a touch of elderflowe­r for freshness. The company offers custom-made mixologist stations and craft beer bars, as well as wine pairings.

Desserts aren’t left out here, and “are easier to customise than the savoury”, according to Kramny. If you have the budget, they can be made by Arisara “Paper” Chongphani­tkul, executive pastry chef of Michelin-starred Saawaan, and Ici, the dessert café.

Indulge in the classics like Mango sticky rice, presented in Canapé & Sons style: Sticky rice marshmallo­w, mango glaze and coconut flakes. If that doesn’t catch your fancy, try the Lemon tart with gold leaf (taking a cue from Indian desserts) or the Thai tea cake with cream cheese.

“We recently did a Star Wars theme party and the dessert was a Hans Solo tartlet. Topped with almond and chocolate paste, the tartlet resembled Hans Solo when he was frozen into carbonite. The event also had a Darth Vader mask,” says Kramny.

The only sustainabl­e catering company in Bangkok, Canapé & Sons uses reusable plateware, staying away from single-use plastic and paper. All of their suppliers are certified organic or have sustainabl­e farming practices. They have also eliminated single-use plastic and the only place they still use it is in the cling wrap for food hygiene reasons, more because there is no alternativ­e available, as yet.

“A lot of our trays and tableware come from a small shop in Chinatown, who creates them just for us. We only use the best like Riedel for glassware. Our aim is to push for different presentati­ons compared to the usual catering events around the city,” Kramny adds.

With most of the wait staff and chefs having previously worked at five-star establishm­ents, the team is well-versed in how the wine, drinks and food need to be served and presented. Whether it is a special occasion that calls for a luxurious sit-down dinner, a birthday party or a BBQ party, Canapé & Sons caters to it all.

The company is also the exclusive caterer for Pruek Cruise, should you want a boat party cruising the River of Kings. The crowning glory is that the company also offers dinners or canapés from chefs of Michelin-starred restaurant­s, like chef de cuisine Arnaud Dunand Sauthier of the two-Michelin-starred Le Normandie and Sujira “Aom” Pongmorn, executive chef of Michelin-starred Saawaan.

“We also are working with a model agency and have models serve the food, should the event require it. It really makes a big difference in terms of first impression­s,” adds Kramny.

All that is needed now is a party!
