FIELD TO FORK
Perched on the 25th floor of Siam@siam Design Hotel Bangkok is Taan, a local produce-led restaurant that serves innovative Thai cuisine inspired by high-quality seasonal ingredients. The restaurant is a sophisticated setting with concrete walls and metal shutters that lend it a shophouse-like feel, while ochre and gold give it a luxe appeal. Executive chef Monthep Kamolsilp created a menu that is ingredient-focused and prepared using traditional techniques. Favourites here include line-caught fish, deep-fried with turmeric and popped rice, and served with turmeric rice crackers; and braised beef offal from Petchaburi, glazed with crab sauce, deep-fried and served with pungent chilli sauce and seasonal vegetables. Following its food philosophy, the cocktails are concocted with local spirits and ingredients – like Samphran (Phaya rum, bael fruit and toddy palm water) and Ree Ree Khai San (Isaan rum, sticky rice syrup, sweet basil and coconut water).
