Pistachio Margarita

“This one actually has a good story. It’s inspired by my dear friend and colleague Cedric’s drink, which was a take on a daiquiri created for a cocktail competitio­n. I was looking for a tequila drink, and a margarita version of this one seemed like it would work. So, the Pistachio Margarita, which had a different name in the beginning when it was created for this amazing event in Athens, is now made with 55ml of Arquitecto tequila blanco, which is created by Enrique Fonseca in the highlands of Mexico, and part of our Eco Spirit Program here at Four Seasons Bangkok. Add to that 25ml of fresh lime juice, and 30ml of our housemade pistachio orgeat. The drink is served straight up, and the finishing touch is a raspberry-sea salt rim, made from dry frozen raspberrie­s and sea salt.”
