Before his arrival in Bangkok, chef Thierry Drapeau perfected his craft at some of France’s finest kitchens, including his own 2-Michelin starred Les Chabettoir, in the Saint-sulpice-le-verdon region of the Loire Valley. At the recently opened
Signature Bangkok, located on the 11th floor of the VIE Hotel, he presents what he refers to as “floral cuisine”; a series of seasonal menus that are light, expressive, and complemented by the delicate flavours of edible flowers and herbs. Offering a fresh twist on French fare – combined with a dash of theatre, and a relaxed Art-deco interior – each of the 3- and 5-course set menu meals here tells a tale, connecting guests to nature by revealing the terroir and stories behind every ingredient. Meanwhile, the predominantly biodynamic wines are a reflection of the restaurant’s culinary philosophy, with an overall emphasis on small-scale vintners committed to low-intervention techniques.
