Illusion Cocktail

“It’s called Illusion because from the top you can see the ice cube, but viewed from the side it kind of disappears, because it’s perfectly clear. It’s also named for the taste, because when you see something this colour you expect a drink that’s light with not too many flavours. But actually it’s really rich and powerful. Inside is Hendrick’s gin, peach liqueur, and clarified lime juice. Then we add a touch of lemongrass syrup, and our homemade soda. It’s served in a Chardonnay glass, to enhance the aromas, with a squeeze of lemon, and garnished with an edible flower.”
