Sweet Pairing


“One of the tasting menu items at Clara I love is the ‘Pocket Coffee’ dessert, made with chocolate, coffee, mascarpone, and amaretto. I paired this one with Li Veli Aleatico Passito, a sweet wine from Salento, in Puglia, which has been barrel-aged for 10 years. This is a pairing that I think uniquely adds to the dish. If you taste it alone you’ll know it’s a large and profound kind of sweet wine, but if you taste it with this dish, it’s like the glaze on the dessert.”
