At Stella, Capella Bangkok’s beautifull­y designed bar and lounge, Bar Manager Pranisa “Niza” Treechanas­in puts her creative stamp on the beverages appearing in the expertly crafted drinks menus. She points out that the recipes themselves are a collaborat­ive effort between her and her team, but she takes a lead role in the visuals, such as choosing the glassware. Her Champagne creation is from Stella’s signature cocktail menu, which was created as an elaborate homage to four brave ladies of history.

“A little of spice goes a long way in our ‘Sun of Goa’, a drink inspired by the stirring legend of Rani Lakshmi Bai, a pivotal symbol of the Indian rebellion,” explains Niza. “The drink blends 40ml of Stranger & Sons Indian gin, 10ml of Mackintosh blended scotch whisky, 20ml of homemade turmeric syrup, 5ml of homemade galangal syrup, and a 20ml Champagne top up. For this top up we use Vraken Capella Champagne, which is made special for Capella.”
