The departure of Chef Arnaud Dunand Sauthier from the Mandarin Oriental, Bangkok’s two-michelin-starred Le Normandie restaurant sent a few shockwaves through the city’s foodie community, but thankfully he’s remaining in Bangkok and even plans to open his own restaurant – appropriat­ely named Maison Dunand – in the spring of 2022. In the meantime, those wishing to get a first taste of what’s to come can check out the “pop-up” version of Maison Dunand on the top floor of Gaggan Anand restaurant on Sukhumvit Soi 31. This very special dining experience runs until January 15, during lunch (4- and 5-course menus) and dinner (6- or 9-course menus), but only from Thursday to Monday. Taking inspiratio­n from the chef’s culinary education in the French Alps, the tempting selections on offer include snail with watercress and black garlic, pigeon with anchovy and lemon, caviar with potato and sea urchin, and suckling pig with juniper and apple.
