The newly launched menu of signature cocktails, entitled ‘Memories Never Told’, draws inspiration from childhood recollections, music, the cosmos, and more. “This is my life,” Francesco says. “I bring my soul into what I do.”
“When I was about seven, a lady in the village would ask me to help pick peas on her farm, and after I’d get to bring a big bag home for my mom. That inspired this cocktail, which is made with Roku Japanese gin (45ml), Limoncello (10ml), and a homemade green pea syrup (10ml). To that we add a dash of absinthe, a dash of cucumber bitter, and top it with yuzu tonic water. It’s garnished with edible flower and then I give the glass two sprays of a fragrance I call ‘Rain Forest Extract’.”
