NAUGHTY RED RIDING HOOD

“For this cocktail we use a butter washed mezcal (45ml). To that we add housemade raspberry cordial (45ml), and the whipped froth on top is “mezcal air” – made with lactic acid and an emulsifier agent. The sweet and sour taste from the raspberry is very predominant, but you also have a nice smokiness from the 400 Conejos Joven mezcal and the salted butter adds a touch of savoury. It’s like a twist on the margarita. We call it ‘Naughty Red Riding Hood’ because the colour makes it look sweet and innocent, but it’s wickeder than it looks.”
