FF COCKTAIL

“This cocktail, the ‘FF’, is named for its main flavours – fico e formaggio, or fig and cheese. Using Buss N°101 Belgian gin, and a sous vide technique, we create a clarified, blue cheese infused gin. We combine this infused gin (45ml) with our housemade fig cordial (20ml) and a touch of lemon juice (10-15ml), and garnish it with a couple of dashes of chocolate bitter. Then we burn oak wood to smoke it, using a gravity smoker, which is like a ‘vertical bong’. This cocktail is very clear, but you get a feel of creaminess from the cheese with the rich taste of the fig.”
