“I created this spicy margarita for our Wednesday night Tulum edition at Bagatelle. Most of our beverages

are inspired by our French regional cocktail menu where we highlight a local ingredient in the 13 regions of

France. We used a Tequila infused with samphire. It’s commonly known

as sea asparagus and has a grassy and saline taste. This mixes well with

the other ingredient­s of the drink and makes the chilli avour really

stand out.”
