What was your favourite thing about writ­ing the Le­banon food story? “De­spite be­ing com­pletely hair-raising, driv­ing around Le­banon was in­cred­i­ble. It gave me the free­dom to re­ally ex­plore the coun­try and see ev­ery­thing that I wanted along the way. I loved the quiet coun­try roads and the epic land­scapes in the moun­tains.”

What is your favourite travel mem­ory from 2018? “Liv­ing in cen­tral Lon­don, it’s not easy to re­lax at home. A trip to the Greek is­land of Paxos with my fam­ily was the per­fect tonic. We hired a beau­ti­ful villa to chill out in, went to the stun­ning beaches and I got to cook up a storm ev­ery day.”
