When this chef opened his first trat­to­ria some 30 years ago, the lo­cals in Mo­dena, north­ern Italy, were scep­ti­cal about his take on their sta­ple dishes. They’ve since come round and Os­te­ria Frances­cana is peren­ni­ally named one of the world’s top three res­tau­rants. Along­side Redzepi and Adrià, Bot­tura spear­headed the de­vo­tion to se­ri­ous foodie pil­grim­ages. And yet, here is a chef at the top of his game not just fo­cused on stars but on mak­ing a real dif­fer­ence to how we can eat more sus­tain­ably and mind­fully. He’s now the cham­pion of the anti-waste move­ment, with his Food for Soul ini­tia­tive res­onat­ing on menus from Brighton to Hud­son Val­ley.
