Soak the hal­loumi in milk 24 hours prior to use Heat a fry­ing pan with a lit­tle oil and when hot, sear the cheese slices un­til deep golden.

Sear the beef fil­lets on a hot grill or fry­ing pan and cook un­til pink. Al­low to rest. In a hot fry­ing pan, brush the sliced cu­cum­ber rounds, then sear un­til well coloured on both sides. Dress the dish in a rus­tic fash­ion, add hal­loumi, driz­zling with the dress­ing to fin­ish.
