Na­dia San­tini’s mar­row ravi­o­lis

Squash ravi­oli is a spe­cialty of the Ital­ian town of Man­tua. Once dur­ing a trip there I had the op­por­tu­nity to taste those made by the three-star chef Na­dia San­tini. I or­dered a plate, then a sec­ond, and then a third. They were sim­ply sub­lime.the salty-sweet recipe was a great culi­nary dis­cov­ery. I don’t think I could ever get bored of eat­ing it. I serve a homage to the recipe at my resta­rau­rant in Paris,
