The humble lettuce isn’t just salad filler. With these dishes, make it the hero of your first 2018 meals
From being an extra to becoming the hero, the humble lettuce has come a long way.
Prep time 15 mins Serves 4
3 white nectarines, cut into wedges 50g mixed curly leaves, such as green elk, frisée and wild rocket
4 tbsp finely chopped chives
FOR THE VINAIGRETTE
100g creamy Greek feta, crumbled 80ml( ⅓cup) extra-virgin olive oil 2½ tbsp lemon juice 2 tbsp walnut oil 2 tsp mild honey
For feta vinaigrette, whisk ingredients together in a bowl, season well and set aside. Place nectarine wedges on a plate. Combine leaves in a bowl, drizzle with a little dressing, then scatter the nectarines over. Scatter with chives, drizzle with extra dressing, season to taste and serve.
