CAMEMBERT PARCEL

INGREDIENT­S

1x150g Camembert cheese

3 tbsp basil pesto

80ml baby spinach, blanched About 200g button mushrooms, fried About 6 short spring onions

1 feta round, coarsely crumbled 4 sheets phyllo dough

2 tbsp butter, melted

METHOD

Preheat the oven to 200C. Slice the Camembert cheese horizontal­ly into three. Spread pesto on the bottom and middle slices and spoon the spinach, mushrooms, spring onions and feta on top.

Stack the slices on top of each other like a threelayer cake. Brush each phyllo sheet with butter and stack them on top of each other. Put the cheese stack in the centre and fold the dough over to form a parcel, crumple the ends over each other.

Brush with the remaining butter and place the parcel on a baking tray lined with baking paper. Bake for about 15-20 mins or until the pastry is golden brown and crispy. Serve hot.
