CAMEMBERT PARCEL

INGREDIENTS
1x150g Camembert cheese
3 tbsp basil pesto
80ml baby spinach, blanched About 200g button mushrooms, fried About 6 short spring onions
1 feta round, coarsely crumbled 4 sheets phyllo dough
2 tbsp butter, melted
METHOD
Preheat the oven to 200C. Slice the Camembert cheese horizontally into three. Spread pesto on the bottom and middle slices and spoon the spinach, mushrooms, spring onions and feta on top.
Stack the slices on top of each other like a threelayer cake. Brush each phyllo sheet with butter and stack them on top of each other. Put the cheese stack in the centre and fold the dough over to form a parcel, crumple the ends over each other.
Brush with the remaining butter and place the parcel on a baking tray lined with baking paper. Bake for about 15-20 mins or until the pastry is golden brown and crispy. Serve hot.
