500g pack­aged mi­crowave fried rice

10 eggs

1 cup loosely packed fresh co­rian­der leaves

1 fresh long red chilli, thinly sliced


Heat fried rice in mi­crowave ac­cord­ing to di­rec­tions on packet. Mean­while, whisk eggs and 2 tbsp wa­ter in large bowl un­til com­bined; sea­son.

Heat oiled medium fry­ing pan over high heat. Cook quar­ter of the egg mix­ture about 1 minute or un­til start­ing to set. Spoon a quar­ter of the hot rice along cen­tre of omelette. Fold omelette into three; slide onto warm plate. Re­peat with re­main­ing egg mix­ture and rice to make four omelettes. Sprin­kle with co­rian­der and chilli.
