CRUSTLESS MILK TART

INGREDIENT­S

4 large eggs, separated

1 cup white sugar

2 tbsp butter, melted, plus extra for greasing

210g cake flour

1 tsp baking powder

1 litre milk

Cinnamon sugar, to serve Blueberrie­s, to serve

METHOD

Preheat oven to 180°C. Grease a 1.5-litre pie dish with a little butter. Beat egg yolks and sugar together. Add melted butter. In a separate bowl, sift together flour and baking powder and then fold into egg mixture. Mix well. Gradually add milk to the egg mixture. Beat egg whites until stiff but not dry. Fold lightly into egg-milk mixture then pour into prepared dish.

Bake for about an hour or until set. Remove from oven and sprinkle with cinnamon sugar. Serve topped with blueberrie­s.
