STEAMED SALMON WITH QUINOA AND RED ONION DRESSING
PREP AND COOK TIME: 30 MINS | SERVES 2
INGREDIENTS
1 cup quinoa
2 cups water
2 x 150g salmon fillets
40g baby fennel, thinly sliced Salad leaves, a handful
FOR THE DRESSING, WHISK TOGETHER 1/2 cup extra-virgin olive oil
1/3 cup lemon juice
1 small red onion, finely chopped
1/2 tsp honey
Rocket or watercress leaves, as desired
METHOD
Rinse the quinoa well, then place in a mediumsize pan with 2 cups of water. Bring to boil, then reduce heat to low, cover and simmer for about 10 minutes or until all the water has evaporated and the quinoa is tender and translucent. Meanwhile, season the salmon with salt and pepper and place in a steamer over a pan of simmering water. Steam for 6 minutes or until cooked through. Divide the quinoa between plates, top with fennel, salad leaves and a piece of salmon. Spoon over the dressing and serve immediately.
