BANANA OAT LOAF

PREP TIME 15 MINS | COOKING TIME 1 HOUR | MAKES 1 LOAF

INGREDIENT­S

2 cups oats

2 tsp bicarbonat­e of soda

1 tsp salt

1 tsp cinnamon powder

2 eggs, whisked

1 tsp vanilla essence

2 bananas, mashed

125ml apple sauce

125ml yogurt

4 tbsp melted butter

¾ cup (180ml) brown sugar

2 tbsp honey

1 cup roughly chopped pecans

½ banana (it should be sliced lengthwise)

METHOD

Preheat the oven to 180°C. In a blender, blitz together oats, soda bicarb, salt and cinnamon powder.

In a separate bowl, mix together the remaining ingredient­s, except pecans and banana, until well combined. Add to the oat mixture and mix well. Add pecans and spoon into a greased loaf tin.

Top with banana slice and bake for an hour or for an hour or until done. Serve with butter.
