BLACK BEAN LETTUCE WRAPS
PREP AND COOK TIME 15 MINS | SERVES 4
INGREDIENTS
2 tsp olive oil
1 onion, finely chopped
1 green chilli, finely chopped
1 tsp ground cumin
¼ tsp smoked paprika
400g tinned black beans, drained
1 ripe tomato, chopped or handful of cherry tomatoes, halved
Sea salt and black pepper, to taste
1 bunch coriander, chopped
Lettuce cups, tomato salsa, avocado, lime juice, Greek yogurt and steamed corn, to serve
METHOD
Heat oil in a frying pan and saute onion over medium heat. Add chilli, cumin and smoked paprika. Cook for a minute. Add black beans and tomato, then toss through. Cook until beans get slightly mushy. Add a splash of water, if needed. Season with a little sea salt and black pepper then fold through some of the coriander Divide between the lettuce cups. Top with tomato salsa. Serve with lime, avocado and sweetcorn drizzled with lime juice and a dollop of yogurt.
