At Ra­musake, we serve the Foxy Lady cock­tail with 100ml Ital­ian-style bub­bles, in­stead of the kom­bucha.

25ml bal­samic rasp­berry shrub (recipe fol­lows) 100ml sparkling kom­bucha, gin­ger beer or tonic water

Place shrub and kom­bucha, gin­ger beer or tonic water in a glass. Stir gen­tly un­til well mixed, then add ice. Top with more kom­bucha, gin­ger beer or tonic if needed.

Bal­samic rasp­berry shrub

In a metal con­tainer, place 500g caster su­gar and 250g fresh rasp­ber­ries. Squash to­gether to form a paste. Let it rest for 12 hours. Add 150ml bal­samic vine­gar to the paste, mix well and let it rest for an­other 12 hours. Strain liq­uid us­ing a fine mesh strainer. Pour the bal­samic rasp­berry shrub into a ster­ilised bot­tle, then seal and store in the fridge.
