FOXY LADY MOCKTAIL
At Ramusake, we serve the Foxy Lady cocktail with 100ml Italian-style bubbles, instead of the kombucha.
25ml balsamic raspberry shrub (recipe follows) 100ml sparkling kombucha, ginger beer or tonic water
Place shrub and kombucha, ginger beer or tonic water in a glass. Stir gently until well mixed, then add ice. Top with more kombucha, ginger beer or tonic if needed.
Balsamic raspberry shrub
In a metal container, place 500g caster sugar and 250g fresh raspberries. Squash together to form a paste. Let it rest for 12 hours. Add 150ml balsamic vinegar to the paste, mix well and let it rest for another 12 hours. Strain liquid using a fine mesh strainer. Pour the balsamic raspberry shrub into a sterilised bottle, then seal and store in the fridge.
