Recipe for Orange and rocket salad

When you don’t want the hassle of a warmed dish, a salad always comes to the rescue in almost every form. This delish salad combines different textures and tastes, uniting rocket and orange slices with the bite of mustard and pepper with the smooth sweetness of honey. Despite toasted sesame seeds, this salad is great served at room temperatur­e - and even cold.

Preparatio­n: 8 minutes Cook: 7 minutes Serves: 4

INGREDIENT­S:

■ 4 tbsp sesame seeds

■ 2 tbsp white wine vinegar

■ 2 oranges, thoroughly peeled and cut into 5 mm slices, juice reserved

■ ½ tsp runny honey

■ ½ tsp medium hot mustard

■ 2 to 3 tbsp olive oil

■ 200 gms rocket

■ 30 gms Parmesan cheese

■ Salt and ground black pepper, for seasoning

METHOD:

1. Toast the sesame seeds in a non-stick frying pan until golden, keep stirring.

2. Whisk the vinegar, orange juice, honey and mustard together and season with salt and ground black pepper. Whisk in the oil to form a vinaigrett­e.

3. Arrange the orange slices on plates. Dress rocket with the dressing and arrange on the oranges. Shave Parmesan over the top and serve sprinkled with sesame seeds. You can have this as a cold salad too.
