Hamilton’s is a new restaurant in Abu Dhabi and it’s offering something different. It plays on classic English dishes with modern twists – it allows me to express myself.

I’m working on a nitrogen foam minted pea purée and tartare sauce as a dip for our outrageous­ly crispy fish and chips. It comes with an infused, atomised sea vinegar.

The chefs I train would call me… annoying. He changes his mind all the time, has too much energy, always listens to music and is a perfection­ist. But he has time for everyone and pushes them to express themselves.

The most famous person I’ve cooked for is Brad Pitt when I was a private chef. I guess he liked my food – I wasn’t fired. He’s a cool guy.

I did a food trip around Asia last year and I had the Durian fruit [known for its terrible smell] and I can honestly say it was horrific.

A couple of years ago I made a full English breakfast, but as a dessert. Everything looked savoury but tasted sweet. That took four days to make but was worth it.

In my spare time I love keeping fit. I love speed and cars, I used to race. I love to party and dance.

When I eat junk food, I go for a cheeky pastry or a really good smooth rich coconut ice cream drizzled with a sharp lime syrup. I want one now!
