Ever since I can re­mem­ber, my fam­ily has eaten from farm to ta­ble. My par­ents grew their own veg­eta­bles in the gar­den next to our apart­ment in Cortina d’Am­pezzo, and the meat and poul­try were all lo­cal sourced from the Dolomites.

Work­ing at Il Borro is a dream for any chef. The culi­nary di­rec­tion of the restau­rant, the qual­ity of the or­ganic prod­ucts and the sus­tain­abil­ity were made clear since day one, and that com­mit­ment re­ally moved me.

I love the mul­ti­tude of op­tions across Dubai’s foodie scene. From the high-end restau­rants to the won­der­ful small cafés in Deira with its amaz­ing shawarma, there’s such a breadth of choice.

My mid­night snack at home is a very sim­ple sand­wich that in Italy we call “toast”. It’s two slices of bread stuffed with melted cheese and some cold cuts served grilled with some cock­tail sauce.

I am in love with Asian food. If I could eat any­where in the world tonight I’d be in Ja­pan, prob­a­bly en­joy­ing a nice ra­men or some sushi.

My very first VIPs were Woody Allen and Danny DeVito. It was in New York al­most 20 years ago.

The top­pings on my per­fect pizza? Buf­falo moz­zarella, cherry tomato and sweet gor­gonzola.
