Ever since I can remember, my family has eaten from farm to table. My parents grew their own vegetables in the garden next to our apartment in Cortina d’Ampezzo, and the meat and poultry were all local sourced from the Dolomites.
Working at Il Borro is a dream for any chef. The culinary direction of the restaurant, the quality of the organic products and the sustainability were made clear since day one, and that commitment really moved me.
I love the multitude of options across Dubai’s foodie scene. From the high-end restaurants to the wonderful small cafés in Deira with its amazing shawarma, there’s such a breadth of choice.
My midnight snack at home is a very simple sandwich that in Italy we call “toast”. It’s two slices of bread stuffed with melted cheese and some cold cuts served grilled with some cocktail sauce.
I am in love with Asian food. If I could eat anywhere in the world tonight I’d be in Japan, probably enjoying a nice ramen or some sushi.
My very first VIPs were Woody Allen and Danny DeVito. It was in New York almost 20 years ago.
The toppings on my perfect pizza? Buffalo mozzarella, cherry tomato and sweet gorgonzola.
