I grew up in Chicago and Dallas in the US, which are essentiall­y the beef capitals in the country. I love steak and cooking with beef so it seems I was drawn to The Hide.

Having just arrived in Dubai, I have not had a lot of time to spend with my new Hide family. I would like to think that they will get to know me as a great leader and someone they are happy to work for.

I love so many different cuisines that I don’t think I can choose my ultimate favourite. One thing I can say is I am very excited to try all of the different styles of Arabic food here.

My favourite steak cut? The rib eye and, if I can get it, bone-in or a tomahawk even.

What annoys me when you go to a restaurant is poor service. I can go to a restaurant and have mediocre food, but if the service was phenomenal I will definitely be back. Food is a very important part of a restaurant but it is the experience and the service that will bring the guest back.

The number one quality of a great restaurant is teamwork. If we move and execute as a team and we support one another we cannot fail.

I have a guilty pleasure and it’s playing video games. I have been playing since the original Nintendo was released.
