All’onda is the new Italian restaurant at the Emerald Palace Kempinski. We pay homage to Venice’s diversity of cuisine sparked from its many years of trade from the east to the west.

The best dishes? The yellowtail crudo, spaghetti carbonara and fire roasted baked potato are all musttry dishes – but I couldn’t choose just one.

Tomatoes are the most important ingredient that we use. They offer sweetness when cooked down and acidity when left fresh. They are the ultimate balancer.

I love how theatrical the Dubai food scene is. It encourages the guest to become a larger part of the restaurant experience, which I fully support.

It pains me a little to say this, as a born and raised New Yorker, but I think Los Angeles is really shining these days in the culinary scene. The produce is as fresh as it gets and the chefs are really embracing ethnic diversity in new ways.

Last meal on earth, what am I eating? An entire kilogram of caviar with a very big spoon!
