All’onda is the new Ital­ian restau­rant at the Emer­ald Palace Kempin­ski. We pay homage to Venice’s di­ver­sity of cui­sine sparked from its many years of trade from the east to the west.

The best dishes? The yel­low­tail crudo, spaghetti car­bonara and fire roasted baked potato are all must­try dishes – but I couldn’t choose just one.

Toma­toes are the most im­por­tant in­gre­di­ent that we use. They of­fer sweet­ness when cooked down and acid­ity when left fresh. They are the ul­ti­mate bal­ancer.

I love how the­atri­cal the Dubai food scene is. It en­cour­ages the guest to be­come a larger part of the restau­rant ex­pe­ri­ence, which I fully sup­port.

It pains me a lit­tle to say this, as a born and raised New Yorker, but I think Los An­ge­les is re­ally shin­ing these days in the culi­nary scene. The pro­duce is as fresh as it gets and the chefs are re­ally em­brac­ing eth­nic di­ver­sity in new ways.

Last meal on earth, what am I eat­ing? An en­tire kilo­gram of caviar with a very big spoon!
