I became a chef by default. When I was nine, I was visiting my godparent’s hotel in Scotland. I was pretty rebellious so I was sent to the hotel kitchen to peel potatoes. As luck would have it what was meant to be a punishment became my biggest passion.

Hoping to land my first job, I sent 52 letters to hotels around London. It was my boss at my parttime restaurant job during my catering college years that encouraged me to head for London. I eventually landed a three-year apprentice­ship with Browns Hotel and the rest is history.

Having been here 17 years, I can say firsthand the restaurant scene here has changed drasticall­y. Dubai has now reached a world-class level standard, thanks to having better produce and better talent, both celebrity and homegrown chefs.

Ever since I started worked 16 to 18 hours daily in London, I found myself turning to Cornflakes. A bit absurd, I know, but it really goes with anything!

It’s just a matter of time before we reach Michelin-star level. I’ve experience­d many Michelin restaurant­s in my life, and I can hand on heart say that our food and drink offering is truly legendary. The UAE is a transition­al place and that’s the only reason I think it’s more challengin­g to reach that Michelin status.
