Yummy treats to pack for your brood as they head back to school. They may be easy enough for them to do!

INGREDIENT­S

• 1 box of spaghetti • Salt • 1 can of chopped tomatoes • 2 cloves garlic • ½ large onion or 1 medium onion, chopped • 4 tbsp olive oil • Approximat­ely ¼ tsp salt or to taste • Fresh basil • Pinch of sugar

METHOD

Place a large frying pan or pot on the stove, and pour the oil into it.

Add the onion and sauté, then turn the heat down to low and let it simmer for a while till the onion gets soft but not brown.

Add the garlic and sauté for a minute or two.

Then add the can of tomatoes and mix. Raise the heat slightly. Add salt and mix. Let it cook on medium heat till the tomatoes turn into a nice sauce. If the tomato pieces are too large, lightly press down with the back of spoon to break them. Add a pinch of sugar. Add some fresh basil, either chopped or torn pieces. Remove form heat and keep aside.

In the meantime, put a full kettle onto boil.

Place a large enough pot onto the stove. When the water is boiled, add it to the pot and put the stove onto high. When the water is boiling, add 1 tbsp salt.

Add your pasta and mix well so that the pasta does not stick. Stir until you see that the pasta is boiling well and nothing is sticking.

Give it about 10- 12 minutes and you’ll see the colour of the pasta has changed. Take a spoon or fork and carefully take out a piece of pasta. Let it cool for a few seconds and bite into it. It should be soft but not mushy and have a ‘ bite’ to it ( al dente).

Carefully strain the pasta using a colander ( be sure to pour away from yourself.

Take the drained pasta and add it to the hot pomodoro sauce, mixing gently to combine.

Place in a serving bowl or individual bowls and garnish with more fresh basil and some grated parmesan.
