MACKEREL, FETA & BEETROOT SALAD

INGREDIENTS
• Small knob butter • 4 x mackerel fillets • Juice of half a lemon • 1 tbsp olive oil • ½ tsp brown mustard seed • ½ tsp caraway seed, crushed • 50g feta cheese • 200g pack tenderstem broccoli • 2 cooked beetroots, thinly sliced
METHOD
1 Bring a small saucepan of salted water to the boil and cook the broccoli for about 3mins. Drain and set aside.
2 Season the mackerel. Melt the butter in a frying pan and fry the mackerel, skin side down for 2-3mins. Flip over and fry for a further 2mins, or until the mackerel is just cooked through.
3 Make the dressing by mixing the lemon juice, olive oil, brown mustard seed and caraway. Lightly season. On a plate, lay the mackerel on top of the beetroot and broccoli, scatter with feta and then pour over the dressing.
