SOUTH INDIAN COCONUT & PRAWN CURRY

INGREDIENT­S

• 200g raw prawns • 1 tsp turmeric • ½ tsp salt • Juice of 1 lemon • 1 tbsp coconut oil • 1 onion, sliced • 2 tomatoes, chopped • 3 cloves garlic • 3cm fresh ginger, grated • 1 tsp mustard seeds • 1 tsp each ground black pepper, coriander and cumin • 2 red chillis, finely chopped • 200ml coconut milk • 25g coriander leaves • ½ tsp sugar

METHOD

1 Combine prawns with turmeric, salt and juice of half a lemon in a bowl.

2 Heat oil in a pan, sauté onions for 5mins. Stir in tomatoes, garlic, ginger, mustard seeds, coriander, cumin, pepper, chillis and cook for 3-4mins.

3 Add prawns, marinade and cook for 1min, add coconut milk. Bring to boil, reduce heat and simmer for 3-4mins to cook prawns. Add sugar, a squeeze of lemon, coriander and serve.
