THAI SALMON PARCELS

INGREDIENT­S

• 2 salmon fillets • 1 red chilli • 1 spring onion • 1 green pepper • 8 baby corns • 8 sugar-snap peas • 2 kafir lime leaves • 1 tsp fresh ginger, grated • 1 tbsp coriander

For the sauce 1 tsp fish sauce • 1 tsp lime juice • ½ tsp brown sugar • 1 tbsp green curry paste • 4 tbsps coconut milk

METHOD

1 With the oven at 200°C, divide the vegetables between some foil or parchment and lay the salmon on top.

2 Mix the sauce ingredient­s, add to fish and veg. Top with ginger, coriander and lime leaves. Form an envelope around the salmon and bake for 10-12mins.
