KIMCHI-STYLE SLAW WITH STEAK AND NOODLES

INGREDIENT­S

• ½ small white cabbage, sliced • 2 carrots, grated • 10 small radishes, finely sliced • 100g beansprout­s • 1 red chilli, finely sliced • 25g coriander, roughly chopped • 20g toasted sesame seeds • 100g soba noodles • 2 x hanger or rump steaks • 1 tsp sesame seed oil

For the dressing • 1 tbsp lime juice • 1 tbsp rice vinegar • 1 tsp fish sauce • ½ tsp brown sugar • ½ tsp chilli powder • 2cm piece fresh ginger, grated • 1 clove garlic, crushed

METHOD

1 Combine the dressing ingredient­s in a large bowl. Add the cabbage, carrots, radishes, chilli and coriander. Stir and set aside to infuse.

2 Brush the steaks with sesame seed oil. Heat a frying pan or griddle and fry the steak for 3mins each side. Cover and set aside to rest.

3 Prepare the noodles according to pack instructio­ns. Arrange the noodles and steak on a warmed plate, sprinkle over the sesame seeds and serve with the kimchi.
