Jane Price cre­ates the ultimate sausage roll - with cur­ried rab­bit

What better por­ta­ble savoury snack is there but a crisp and chewy sausage roll, and this one has the added fea­ture of be­ing made with lo­cal rab­bit. There is also sausage meat har­vested from three sausages to add the nec­es­sary fat, and I’ve added some spices to give it a fra­grant twist. The spices were toasted in a dry fry­ing pan first to bring out the flavours and added to the un­cooked meat mix­ture.

I’m a big fan of try­ing out dif­fer­ent flavour com­bi­na­tions on old favourites, hence the spices. How­ever, I de­cided not to in­clude chilli in this one – think­ing of the edi­tor’s del­i­cate palate! To be fair, I have added a touch too much chilli for my own taste in the past, giv­ing me a red com­plex­ion and the hic­cups. Not a pretty sight or an en­joy­able

meal, es­pe­cially if the edi­tor then ditches the meal in favour of some cheese on toast.

This ba­sic recipe and method can eas­ily be mod­i­fied to make smaller sausage rolls to serve at par­ties, or one big one to cut into slices and serve with veg­eta­bles, and of course, you can add chilli if you like your food hot as well as spicy. It’s im­por­tant to sea­son the meat mix­ture cor­rectly, with a good pinch of salt and a grind of black pep­per.

There’s some­thing ir­re­sistible about hot sausage rolls so they are ideal made as small ones, put in the freezer raw and only put a few in the oven as you need them. Just take out of the freezer, brush with beaten egg, score with a sharp knife, and stick them in the oven. You will need to add an ex­tra five min­utes to the cook­ing time if cooked from frozen. Best eaten hot – be care­ful not to burn your­self – but can also be eaten cold.

There is no need to make your own puff pas­try – even the top TV chefs don’t make their own – un­less you en­joy mak­ing it, of course. Per­son­ally, I just don’t have the time to make my own, and buy­ing it ready made en­ables me to make these yummy sausage rolls.

It lookes de­li­cious and smells even better. This must be the ultimate sausage roll!
