Jane Price creates the ultimate sausage roll - with curried rabbit
What better portable savoury snack is there but a crisp and chewy sausage roll, and this one has the added feature of being made with local rabbit. There is also sausage meat harvested from three sausages to add the necessary fat, and I’ve added some spices to give it a fragrant twist. The spices were toasted in a dry frying pan first to bring out the flavours and added to the uncooked meat mixture.
I’m a big fan of trying out different flavour combinations on old favourites, hence the spices. However, I decided not to include chilli in this one – thinking of the editor’s delicate palate! To be fair, I have added a touch too much chilli for my own taste in the past, giving me a red complexion and the hiccups. Not a pretty sight or an enjoyable
meal, especially if the editor then ditches the meal in favour of some cheese on toast.
This basic recipe and method can easily be modified to make smaller sausage rolls to serve at parties, or one big one to cut into slices and serve with vegetables, and of course, you can add chilli if you like your food hot as well as spicy. It’s important to season the meat mixture correctly, with a good pinch of salt and a grind of black pepper.
There’s something irresistible about hot sausage rolls so they are ideal made as small ones, put in the freezer raw and only put a few in the oven as you need them. Just take out of the freezer, brush with beaten egg, score with a sharp knife, and stick them in the oven. You will need to add an extra five minutes to the cooking time if cooked from frozen. Best eaten hot – be careful not to burn yourself – but can also be eaten cold.
There is no need to make your own puff pastry – even the top TV chefs don’t make their own – unless you enjoy making it, of course. Personally, I just don’t have the time to make my own, and buying it ready made enables me to make these yummy sausage rolls.
