POTATAS BRAVAS

Ingredient­s

■ 4 tbsp olive oil

■ 1 small onion chopped

■ 2 cloves garlic chopped ■ 227g can chopped tomatoes ■ 1 tbsp tomato puree

■ 2 tsp sweet paprika

■ 1 tsp sugar

■ 1 tsp salt

■ 1 tsp chilli powder

■ 900 g potatoes cubed ■ Chopped parsley to garnish

Method

1. Heat the oven to 200g

2. Heat 3 tbsp of the oil in a pan and fry the onion until it softens

3. Add garlic, tomatoes, puree, sweet paprika, chilli powder, sugar , tsp salt and bring to the boil stirring occasional­ly

4. Simmer for around 15 minutes

5. Pat the potatoes dry with kitchen roll, then tip into a roasting tray with 1 tbsp oil and season

6. Roast for around 40 minutes until golden

7. Tip potatoes into a serving dish, spoon over the tomato sauce and garnish with parsley
