This recipe might seem a bit complicated, but it’s only the spice mix that contains a few more ingredients than usual, and it’s so worth the extra time to gather the components together.
I’ve been having trouble sourcing edible vermin lately – the lovely Mick Garvey, my pet pest controller, is willing, but he lives too far away for me to ask him to deliver, and not feel guilty. However, I’ve been lucky enough to find a couple of lads who shoot locally, and they supplied me with the pigeons for this dish, so heartfelt thanks to Colin Freeman, Ben Wiseman and Malcolm Clarke. You’re all lovely boys! I could do with a rabbit, too, by the way, if you’re passing!
This month, I’ve had help from more than one quarter. The inspiration for this superb supper came from my next-door neighbour who makes a habit of cooking with her kitchen windows open. I inhaled the fumes from a piece of gammon she was braising and she gave me some to taste. I was very impressed. Who’d have thought that a humble tin of Pepsi – other cola brands are available ¬ could make a couple of pigeon breasts so tasty, sticky and succulent! Try it – I bet you’ll be as surprised as I was.
You can serve the meat mixture with
Two pigeon breasts A couple of pork belly slices, cubed (optional) Two rashers of streaky bacon One chopped red onion Handful of mushrooms Half each of a green and yellow/orange pepper Seasoning: A tablespoon of garlic paste One dessertspoon of ginger paste – or use fresh whatever you like, but it’s quite rich so I settled for plain boiled rice. You could use plain noodles – even mashed potatoes if you prefer. The belly pork is optional – I added it because I like a bit of fat to add flavour, but you can leave it out and add another couple of pigeon breasts for bulk. I garlic and ginger Half a tsp of five-spice powder, or two star anise Pinch of salt 2 tbs tomato puree 1 tbs Worcestershire sauce 2 tbs dark soy sauce I tbs vinegar One beef stock cube, or pot. I can diet cola
Serve with something bland.
